Ingridients

For 6 people:

2 kg wheat flour (type 500)

1 liter of water

Preparation

Mix flour and water and knead into a loaf.

Fill a larger container with water. We put a loaf in it, which we will slowly rinse. Squeeze the loaf in water gently: gently press it against the bottom of the bowl (as if kneading it). When the water becomes cloudy, drain it and pour fresh water into the container. Repeat the process of squeezing the loaf and changing the water until the water is no longer cloudy. At the beginning of the wringing, we must be careful that the loaf does not fall apart. We try to keep it in its original form. During wringing, the loaf will become more and more compact and gradually its size will decrease. When the loaf is completely washed, we are left with pure gluten – seitan.

In a large bowl on the stove, boil water, salt it, add bay leaf and spices as desired (one teaspoon of smoked pepper, one teaspoon of curry, etc.). Place the seitan in boiling water (you can leave it in the shape of a loaf or cut it into smaller pieces). If the seitan is cut into smaller pieces before cooking, cook it in water for about 25 minutes. However, if we leave the seitan in the form of a loaf, the cooking time will be longer, between 45-60 minutes. Once the seitan is cooked, take it out of the water and prepare as desired. The possibilities for preparation are enormous. It can be fried, breaded and fried, used in sauces, etc. It is important to marinate the seitan well (with soy sauce and spices as desired) before preparation.

Veganism therefore has a very important ecological note, while at the same time loudly opposing the meat industry. It is merely a simple principle of gardening, where all animal products are replaced by plant ones. At the same time, vegan gardening is essentially organic and without negative consequences for any organism and ecosystem. With such gardening, you do not endanger the environment and ethically create a crop that is safe to cultivate. At the same time as creating your own vegan gardens, you are not supporting the meat industry, intensive agriculture, or potentially dangerous fertilizers. With plant-based beds, you have to be a little more careful with what you fertilize the plants with, what substrate you choose and what pesticide you use to spray the crop.

This is not just about exploiting animals, it is also about protecting the animals and yourself. Did you know that pathogenic substances such as diseases, bacteria and viruses are brought to your garden by animal remains? It is really easiest to fertilize flower beds with extra strong fertilizers and control pests with pesticide welds. But it is necessary to imagine what consequences such actions can bring to the environment and people. In vegan gardening, there are a myriad of other options that gently provide a healthy crop and lush garden.

Animal manure, which has been used to fertilize plants since time immemorial, is usually full of many bacteria, viruses, parasites and fungi that are deadly to humans. These are, for example, E. Coli, Listeria, Salmonella and Campylobacter. Antibiotics and hormones used to raise animals are also problematic and of course find their way across the entire digestive tract, resulting in them being found in manure and on your plate.

What the consequences of transmitting the virus from animals to humans are becoming increasingly clear with desperate epidemics – from swine and chicken flu to the pandemic that has reigned around the world since early 2020. It’s not just animal manure that should be to avoid. Animal residues are also present in fertilizers, which bring a bunch of diseases. These are, for example, blood and bones, which are found in products as by-products, as they are swept off the floor of slaughterhouses.

There is a lot of research on how fertilizing with animal manure and fertilizers with animal residues increases antibiotic resistance in humans as well. Such fertilizers are applied directly to agricultural land and create outbreaks of bacterial resistance, both on plants and later in humans. The formation of super-bacteria is a great recipe for environmental disaster.

There would be nothing wrong with fertilizing the gardens occasionally and in small quantities with animal manure from eco-farms and with fertilizers that are organic. However, as soon as the products of intensive agriculture or mass production are at stake, we will receive artificial ingredients and poor quality, which destroy the natural bacterial composition of the soil and consequently enable the emergence of disease.

In gardening, where you want to avoid animal debris in the biggest arc, choose methods that are organic and sustainable. The fertility and liveliness of the soil is completely feasible even with only natural ingredients and without a flood of toxic dirt. Below are some tricks that you can use yourself to create healthy flower beds.

Before the spring preparation of the soil, simply sprinkle quality compost – Vegipost on the surface and bury it lightly so that it decomposes naturally. To protect your fingers, it is also great to use a mat that can be dug into the ground up to 5cm deep. In this way, the soil will retain its fertility, and the mulch will protect it from water evaporation and erosion due to wind and rain. The mulch also protects against weeds. So get rid of a whole bunch of flies at once! The best mat is, of course, the organic one, without dyes and impregnations. Raw coconut crumbs work great.

Birds are already chirping about the importance of compost in the garden. Composting is a natural process where organic material decomposes, creating a home-made fertilizer with a high proportion of humus. In composting, the main microorganisms that make humus are. If you are a gardener and you have the option of composting, roll up your sleeves quickly. Composting is very easy, but it must be done properly, like any other thing.

Organic food residues are the basis for compost as it will break down into rich nutrients for soil and plants. Create layers of food scraps, leaves and cut grass by loading larger and coarser material (pieces of wood) on the bottom and continuing to load increasingly finer materials. What doesn’t belong in compost? Mowed grass growing along the road and food scraps that have traveled a long way to supermarkets and are most likely full of pesticides. Plants work the same way as humans when we meet anew. We quickly make friends with some, while we look at each other ugly from afar. Individual plant cultures thrive perfectly when planted together, and certain ones can in no way thrive in coexistence. The reasons why certain plants are incompatible are not entirely clear. They say that plants that don’t like each other compete for the same nutrients. Plants from the same family are not recommended to be planted together as they are susceptible to the same bacterial, fungal or viral infections. At the same time, they also have the same pests, so it is wise to keep them apart according to peasant logic.

You invest a lot of time and care in flower beds, but what quickly happens is that pests come by and all your efforts go to the franchises! The usual solution for gardeners are pesticides and herbicides, which are harmful to our health and the health of plants and animals. If you want to grow safe and juicy tomatoes, choosing aggressive agents is by no means the right solution. Pests are not your mortal enemies, they are the inhabitants of nature who were here much earlier than we are. In principle, we are the ones who break into their homes. For healthy organic flower beds, it is better to use vegan, organic methods of suppressing unwanted guests. Those that ecologically and sustainably protect against unwanted pests of your gardens.

A vegan solution is to protect flower beds before pests and diseases spread. Such solutions are:

Rotate during the year and between seasons. This prevents the rapid reproduction of pests.

Examples of vegan high-processed foods include soft drinks, sweet and savory pre-packaged snacks, ice cream, chocolate, biscuits, confectionery, bread and bakery products with additives, energy bars, bagged soups, margarines and spreads, breakfast cereals, ready meals and meals, substitutes. meal supplements and distilled spirits. The global food system is on the verge of collapse, and Slovenia’s food security is catastrophic. Exercising self-sufficiency (especially with vegetables, cereals and fruit) and preserving the seeds of indigenous plant species is therefore of survival importance.

The digestive and immune systems are inextricably linked. The digestive tract, especially the small intestine, is the largest immune organ in the human body – as much as 85 percent of the immune system is in the area of ​​the digestive tract. The intestinal microbiota is the largest symbiotic ecosystem in the human body and plays the most important role in maintaining homeostasis (stability of the body’s internal environment). It is made up of all the microorganisms (bacteria, fungi, eukaryotes and viruses) found in the gut. The intestinal microbiota plays an important role in digestion, and its effect on the brain and behavior has been proven. The axis of the microbiota / gut / brain indicates this effect. The influence of the immune system, endocrine glands and the autonomic nervous system (parasympathetic and sympathetic systems) is two-way; the gut microbiota bacteria have an effect on the brain and vice versa, the brain (hence our thoughts as well) has an effect on the gut.

When it comes to vegetarian and vegan diets, man is still most concerned about the body’s supply of protein. In the age of technology, we are taught to question the perfection of nature, which designed man in such a way that his survival is guaranteed even when he gets little protein from food. Namely, the circulation of proteins takes place in the human body; cells constantly produce and break down proteins. In this process, there are always some amino acids left, which the body reuses in the formation of proteins. Proteins are provided to the body by eating cereals, oilseeds (especially hemp), legumes, seeds and nuts… In a balanced diet, these whole foods supply the body with all the essential amino acids. Of particular interest among plant sources of protein are industrial hemp seeds, which contain between 20 and 30 percent protein, and white lupine seeds, which contain between 33 and 38 percent (with all the essential amino acids).

Eating the recommended sustainable food is associated with lower levels of oxidative stress and lower levels of inflammatory processes in the body. Oxidative stress and inflammation play a key role in aging and the development of chronic diseases, and therefore represent an important goal in the development of dietary strategies for disease prevention.

Proponents of the GMO industry argue that genetic engineering is no different from plant hybridization, which has been practiced for centuries. This is definitely not the case. We must respect the inviolability of taxonomic units. As genetic material can be exchanged between plant and animal species in the production of GMOs, this certainly severely affects the inviolability of taxonomic units. The transgenic organisms of plants produced in this way contain the heritage of animals. An individual who consciously chooses to consume only plant-based foods is actually prevented from eating genetically modified plants by his or her intention.

The environment that surrounds us is a huge chemical reactor. In a huge chemical reactor environment, everything goes into reaction. Everything is connected. The individual is inextricably linked to the environment. Because of our involvement in the web of life, it seems extremely important to realize how much we depend on constant interaction with living beings, how important our relationship with them is, and to choose food with free will that no animal has suffered or died. That is ethics. Only this. Otherwise, our mouths are full of excuses. Greed, fear, anger, competition and individualism are not ethical states. Among them, fear is particularly dangerous, as it triggers violence (the worst form of unethical behavior). All the symptoms of all diseases have a single source – fear.

Recently, there has been a widespread mass fear of coronavirus infection. The SARS-CoV (Severe Acute Respiratory Syndrome) coronavirus, identified in 2003, is thought to be an animal virus, still of uncertain origin, possibly bats, that has spread to other animals (civet cats of the Viverridae family) and infected humans for the first time. in Guangdong Province in southern China in 2002. At that time, the SARS-CoV epidemic affected 26 countries, and in 2003 it caused more than 8,000 cases. Since then, a lower number of cases of infection have occurred, either due to laboratory accidents or through transmission from animals to humans. This was followed by the well-known epidemic of coronavirus SARS CoV-2 (Severe Acute Respiratory Syndrome Corona Virus type 2), which is a relative of the already known coronaviruses that cause SARS and MERS (Middle East Respiratory Syndrome). It is most likely a zoonosis. This means an infectious disease that is naturally transmitted from animals (vertebrates) to humans. The origin of this virus is bats, the natural hosts of many species of coronaviruses. The source of COVID-19 (Corona Virus Infectious Disease-19) is linked to the fish market in Wuhan. The infection quickly spread throughout China and soon gained pandemic proportions. Transmission of SARS CoV-2 coronavirus from animals to humans appears to be related to the consumption of meat from infected animals. Markets in China are known to be full of meat from exotic animals. The fear of coronaviruses that we as a society are experiencing on a global scale seems to remind us with a big slap of the collective fear that farm animals are experiencing at this very level and is imprinted as information on their corpses, which sooner or later land in stomachs of omnivorous individuals. Interestingly, coronaviruses cause respiratory distress (difficulty breathing), so characteristic of the state when we feel fear.

Our survival depends on learning the most important values: empathy, responsibility, self-control, humility and compassion. All of this content is ideally embodied by veganism, but today’s society seems reluctant to accept it. We need to be aware that by our actions we are constantly creating debts that we will have to pay; this is the focus of the problem. This is a fundamental principle of successful economic policy, trade and sound social order, which resists any test. Man is a creative creator of his own future and destiny. Veganism is spreading across the planet. Millions of people today are vegans, and thousands of people join them every week. Be one of them!

There are many reasons for veganism: it is healthy, it is good for our planet, it helps reduce the number of hungry people in the world, it is good for animals and it is very tasty! Changing our diet is the best way to show that we care about animals and to oppose cruelty to animals.

Anyone who is vegan can rightly be proud because it contributes to their health, the environment, the well-being of other people and saves the lives of animals. By not buying animal meat, eggs, dairy products and products of animal origin, you show your compassion for everyone around you. The most important thing is what each of us can do to make the world a better place. To Martin Luther King, Jr. said, “The time is always ripe to do something good.”

Protein and veganism

This is not a problem with a plant-based diet, and in some things it is even an advantage – vegan athletes praise better digestion, more energy for training, a lighter feeling after meals and faster regeneration.

Care should be taken to eat more due to increased calorie consumption – especially in the beginning you need to get used to the feeling that we are really eating to satiety. Plant foods have fewer calories per given volume, so they fill our stomachs sooner – this is great for overweight people who want to lose weight (because they are never hungry, but still lose weight), but for the very active it can sometimes be a problem.

More active in the plant diet should increase the intake of legumes (lentils, soy, chickpeas, beans), green leafy vegetables (green smoothies are great) and vegetable fats (avocados, nuts, seeds, nut butter). It plays an important role in the regeneration of fruits, which contain many antioxidants – they neutralize free radicals that are intensively formed during physical activity, reduce inflammation and accelerate the regeneration of muscle fibers.

Veganism can save 8.1 million people a year from death

A recent study at Oxford University found that by 2050, millions of people would have been prevented from dying by eating less meat and more fruit and vegetables. In addition, the planet would be warming much more slowly, and it would save billions of dollars that are now being spent on health and climate change. Less global air pollution

As early as 2011, the UN published a report revealing that a vegan diet is the best way to prevent global air pollution and slow down climate change, and now a study by Oxford University confirms this. The research is the first to include the impact of a vegan diet on both an individual’s health and our planet. Marco Springmann, who will be working on our food at Oxford in the future, said: “We don’t expect everyone to become vegan, but the impact of diet on climate change cannot be ignored. It will be impossible to solve the problem with technological change alone. Deciding on a healthier diet would be a necessary and big step in the right direction. ”

By 2050, at least $ 700 billion could be saved in healthcare

Nobel laureate Pachauri sees meat production as having a detrimental effect on climate change

Earlier this week, at the Savoy Palace in London, representatives of governments and environmental organizations spoke at the forum “Compassion in World Agriculture” about the impact of meat production and consumption on climate change. Dr. Rajendra Pachauri, the UN’s chief climate expert who won the Nobel Prize last year with colleagues and Al Gore, a former US vice president, noted that cattle breeding causes 18 percent of all greenhouse gas emissions, water and soil pollution. , destroys our health and causes suffering to animals on industrial farms. Pačauri proposes a gradual reduction in meat production and consumption.

The volume of breeding is still growing. While meat production was 44 million tonnes in 1950, it was 258 million in 2004 and is projected to double by the middle of the century. Today, every inhabitant of the planet eats an average of 43 kilograms of meat a year. For a kilogram of beef, including feed, we need 323 square meters of agricultural land. If we look at the amount of space needed for other foods, the picture is as follows: for a kilo of fish we need 207, for a kilo of pork 55, for a kilo of pasta 17, for a kilo of bread 16, for a kilo of vegetables such as potatoes, only six square meters of agricultural land . The protein and calorie efficiency is thus 1: 6, which means that a large part of the food is thrown away. Livestock production produces carbon dioxide, nitrous oxide and methane, which are produced by ejaculation, farting and vapors from faeces. Huge areas of the Earth, as much as 30%, are also intended for livestock farming. If you drive around Slovenia, you see that we grow a lot of corn, but people don’t eat it. If we grew food for people on these areas, we would be much closer to self-sufficiency. Rainforests that consume CO2 and are therefore invaluable to humanity are also being cut down for animal feed.

Should the state help with a cleaner environment?

We recently made a request to the Ministry of Agriculture to grow food for people, not animals, in the fields. They replied that it was not in their power and that they were following the wishes of the people. Although subsidies should be for the benefit of all citizens. Of course, it is difficult because so many farmers are engaged in animal husbandry. The transition to crop farming would require state assistance.

What about the carbon footprint tax?

We suggested that too. The food tax should be based on their environmental footprint. This would also mean that plant foods would become much more affordable. Man is an omnivore, which means he can be anything he has to choose from. In the past, man needed more caloric-dense foods, but today we have problems with obesity. But evolution and the science of nutrition are not necessarily the same thing. Evolution means that it leads man to reproduce, that is, that genes are passed on, which has nothing to do with being healthy and long-lived. Life used to be shorter, but with advances in science, medicine, and the science of nutrition and quality of life, life expectancy is increasing. In different periods man ate less meat, but today meat is on a plate several times a day.

What would happen to the planet if they were all carnivores?

If the whole world were to eat the same way as the developed world, we would need a few planets to feed them all. Self-sufficiency in European countries is already impossible today. In the EU, we produce more grain than people consume, but we import grain because we have to feed livestock with it. We would be threatened by droughts, fires, lack of drinking water. Diseases of the modern world, such as diabetes, obesity, cardiovascular disease and many types of cancer, would also escalate.

Of course, there are a lot of them. For example, a Harvard study of 22,698 men and 83,644 women, respectively, found that eating red meat increased overall mortality and cancer mortality. * A vegan diet is good for everyone groups, including infants and nursing mothers, as confirmed by recognized global organizations such as the Academy of Nutrition and Dietetics *, Dietetitians of Canada * and others. If, say, I became a vegan tomorrow, would I go to the pharmacy and buy B12?

You could also go to a nutritional supplement store. Available in sprays, capsules or tablets, the recommended value is 2,500 μg per week. We call vitamin B12 a food, not a supplement, because a supplement could be called meat. We cannot do without B12 because it is very important for our nervous system and functioning. It’s a very similar thing to iodine. Due to iodine deficiency, humanity has had major problems with goiter. They solved this very elegantly by adding salt to it. Vitamin B12 is not produced by animals, but by bacteria, so it can be obtained very cheaply, similar to fermentation, which means that it is a “natural” thing. It is also mostly added to animal feed, which binds to protein and is then eaten. It is a very long chain. However, it could also be consumed directly, which would also be more effective in terms of absorption. You could add it e.g. herbal drinks and the matter would be resolved.

What is a balanced vegan plate?

It consists of legumes, cereals, vegetables, fruits, nuts, seeds, water and B12. That’s it. Compared to the food we are used to from before, we will not lack anything – not even protein, much less taste.

How much more time a day would you need to meet all your nutrient needs with vegan food?

Nothing. Instead of one shelf, you take food from the other shelf in the store. The process is the same and it doesn’t take us any longer. As far as the financial side is concerned, we can live on the same costs as before or even reduce them. It is a food eaten in third world countries and is based on vegetables and grains.

What do you replace eggs and milk with?

In sweet dishes I replace eggs with mashed bananas, and in salty ones I use flax or chia seeds. I prefer flax seeds because they are cheaper. Veganism should not be elitism. Vegan salamis and cheeses come at a high price. I prefer to make my own milk, because that’s how I save. I make milk from cashews by soaking a cup of nuts in boiling water, then draining them and mixing them with one liter of water and a pinch of salt and sugar. I strain through cheesecloth and have milk that lasts up to three days in the fridge. From legume water we can make egg whites, from which we make Spanish windmills and cream cheese… We make cottage cheese cakes from almond cottage cheese…

The suffering of animals for mass human consumption is something we would rather not see at all.

WHICH FOOD IS HEALTHY?
Healthy food comes from healthy soil and a healthy environment. Such plants bear healthy fruits that transmit this health to us. We usually think that healthy foods are fruits, vegetables, wholemeal bread… Hold on! However, food must also be grown or processed in a healthy way. This means: only with natural techniques and means. Free of plastics, fertilizers, sprays, free of artificial additives, which are prohibited in organic food production. Food can be produced without plastics, even if it is not organically certified. This, in turn, requires a greater degree of awareness and research from the consumer, a precise knowledge of the origin and method of production. Depending on the origin, the healthiest food is of plant origin.

Potatoes are a useful source of minerals

Before potatoes were domesticated in bowls and on plates, our everyday potatoes had a rather interesting past.
Except in Ireland, people, though hungry, looked at him with great distrust. They could not help themselves with flowers or leaves. The realization that tubers are edible and even tasty only spread more than 200 years ago. Since then, potatoes have not been ignored for a long time, but a king. We love it every day, the industry has appropriated it and turned it into chips and similar things, but we have nothing to help ourselves with, at least in terms of health and well-being.

Rapeseed, as potatoes are happily named in Carinthia, can be used for all sorts of dishes except desserts. Even in this area, something interesting could be invented, especially if the design of desserts were turned into brines. Either way, the potatoes are with us, and that’s every day. In soups, occasionally in stews, but above all cooked, roasted and baked.

In excessive amounts it harms

In general, this is a good food, it only causes problems if we eat it in excessive amounts. Then, of course, red, and in people who are sensitive to various inflammations, the condition can worsen. Potatoes are a good food for the gastrointestinal tract, a useful source of minerals, a protective food against cancer and a lasting help for healthy blood and blood vessels. What is important, however, is how it is grown – the most useful and least unnecessary ingredients are potatoes from organic production – and how we prepare it. There are quite a few devils around potatoes: raw potatoes cause heat, potatoes, except young ones, are always peeled, and cold potatoes are not eaten except in salads. Well, it’s really different.

Raw potatoes

We eat potatoes with the peel, because there are the most minerals under it. Therefore, we do not sprinkle it with anti-germination agent in the home pantry and we do not buy it in the spring. The belief in the toxicity of raw potatoes was formed on the basis of tubers that turn green in the light and produce solanine, which actually poisons both green tubers and green parts of the plant. Otherwise, potatoes are also edible raw, so for general health promotion we drink freshly squeezed potato juice, which does not cause heat, is an excellent source of minerals and vitamins and is beneficial for the stomach and digestion. It helps heal stomach ulcers, eliminates gallstones and binds heavy metals.

Cold potatoes

As for cold potatoes, we carelessly cook or bake more potatoes than we will eat, because the next day we can eat it just like that (for example for lunch and fuel on a mountain trip), prepare it in a salad or thicken soup or sauce with it.

Potatoes as a standalone dish

Potatoes, along with a vegetable dish, be it a salad or stewed vegetables, are an excellent stand-alone meal that creates the foundations of excellent digestion and healthy conditions in the colon. It goes very well with a little fat, which is added in the form of sour cream, butter, olive, pumpkin, cold-pressed sunflower or sesame oil. When we add spices and herbs, which we add to dishes with potatoes only one or two at a time, the possibilities are so wide that even without excessive ingenuity we can always afford a slightly different potato. Because we are so fond of it, it is good to take into account the consequences: we stock up on potatoes the day before more intense physical activity, for example before a mountain trip.

Potatoes in shapes

Wash the potatoes and cook in a steamer or econom pot. Then we eat it just like baked potatoes, and for a change we can prepare a draft of mashed potatoes or fried potatoes. Mash the mashed potatoes with a fork and in the first case add a little sour cream or yoghurt and any spice. A little spice mixture for curry or a pinch of freshly ground pepper also fits very well. In the second case, mash the potatoes into larger pieces and add the finely chopped onion. Season with soy sauce and pumpkin oil and sprinkle with parsley. The dish is so delicious that despite the large amount of boiled potatoes, there is probably nothing left for later.
