French salad


For 4 people:

1 dl cold soy milk

about 4 dl cold

vegetable oil

1 tablespoon lemon juice

½ teaspoons of salt

2 cups cooked peas

2 cups boiled carrots (diced)

2 pickles (diced)

1 large, boiled potato (diced)


For the mayonnaise: Mix lemon juice and salt into the soy milk. While stirring vigorously with a stick mixer, slowly add oil to the mixture. Stop adding oil when the mixture thickens enough. Mix the vegetables in a large bowl together with the mayonnaise. Place in the refrigerator for at least 2 hours.
