Vegetable pizza with vegan cheese

For 3 people:

Dough ingredients:

400 g whole wheat flour

2.5 dcl of water

1 teaspoon baking powder

a pinch of salt

Cheese ingredients:

1/4 cup cashews

1 cup warm water

2.5 teaspoons tapioca flour

1-2 teaspoons of yeast in flakes

3/4 teaspoon salt

1 teaspoon lemon juice


Mix the flour with baking powder and salt, then gradually add water and knead a pliable dough. Roll it out on a floured surface and shape into a circle. Fold the edges inwards.

Coat the dough with tomato puree, cover with pickled mushrooms and sprinkle with oregano. If desired, add steamed broccoli or other vegetables as desired. Coat it all together with home-made vegan cheese.

Mix all the ingredients in a blender to get a smooth liquid mixture. Pour it into the shrimp and heat over medium heat, stirring constantly. Soon the vinegar will start to thicken and form lumps. Stir until the desired density is reached, then pour the cheese over the coated (not yet baked) pizza and bake for about 20-30 minutes at 180 ° C.
