Bean burger

For 3 people:

1 tablespoon sunflower oil

1 finely chopped onion

1 finely chopped clove of garlic

1 teaspoon ground coriander

1 teaspoon ground oriental cumin

150 g of finely chopped fresh courgettes

425 g any canned beans (drain and rinse)

2 tablespoons freshly chopped parsley

salt and pepper

Preparation

Heat the oil in a frying pan. Stir in the onion and simmer for 5 minutes while stirring to soften. Add garlic, coriander and cumin and fry for 1 minute, stirring occasionally. Add the courgettes and a little water and cook for 4-5 minutes, stirring constantly, until the liquid evaporates. Transfer the mixture to a bowl.

Add the beans and mash it. Stir in the parsley and season with salt and pepper.

Preheat the oven to the grill. Divide the mixture into 4 parts. Roll each piece in flour and form flat, round patties. Drizzle with oil and bake for 4-5 minutes on each side. The mass can also be fried in oil. Serve with bread or salad.
