Peanuts – a treasure trove of antioxidants

A team of scientists from the University of Florida has found that peanuts are very rich in antioxidants that protect against cardiovascular disease and cancer – the leading cause of death in the top two. Peanuts are also high in protein and body-friendly, unsaturated fats. Peanuts (peanuts) are often labeled as unhealthy foods, but scientists find that they contain the same amount of beneficial substances as strawberries.

The latest discovery from America, which testifies to the usefulness of antioxidants, is based on the study of antioxidants contained in several types of peanuts. Antioxidants are active substances (vitamins, minerals, enzymes) that protect the body from dangerous free radicals. Free radicals, which damage the body’s immune system, are also dangerous for the heart and blood vessels, as they cause the oxidation of cholesterol and thus accelerate the clogging of arteries.
Intensive red, orange and green fruits and vegetables are rich in substances – antioxidants that prevent harmful oxidative processes in the body. But American scientists have also added peanuts to the list. Research has found that peanuts contain a significant amount of polyphenols – a type of natural, bioactive substance that is characterized by its antioxidant effects (they are also rich in dark chocolate, dark grapes, dark grape juice and jam, as well as red wine). Peanuts contain particularly large amounts of a polyphenol known as p-coumaric acid.

If salted peanuts are unsuitable, roasted peanuts are all the more recommended, as roasting increases the amount of p-coumaric acid in peanuts, which increases the amount of antioxidants by as much as 22 percent.
Head of the study, dr. Steve Talcott of the University of Florida explained that while they assumed peanuts contained a lot of antioxidants, they were extremely surprised to find that they contained as many antioxidants as fruits.
